Anna, our apples are out here in Connecticut, too. I love making an apple crisp instead of a pie. It's easy and it's quick. I use about 8 to 10 apples for this. Toss the peeled and sliced apples with 1/4c. sugar and 1/4c. brown sugar, plus cinnamon, clove, and ground ginger. Make the crisp with one stick of unsalted butter, 1/4c. sugar, 1/4c. brown sugar, and 3/4c. flour. Cut with two knives (or your hands) until it's crumbly to your liking (I go for pea-sized). Sprinkle the topping on the apples and bake at 375 for around 45 min--or until brown and bubbly. When it's warm, serve. (After you've made it once, you can adjust the sugar to your liking. I tend to use less--just the brown sugar packed well.) If you add a scoop of ice cream on top of it, it's heaven. We love it!
